Lancaster pizza is not what you would consider destination pizza. We don’t have the same reputation here that Chicago and New York have. The popular artisan pizzas that are popping up in the bigger cities don’t seem to have reached our little city.

However, despite our lack of pretension, we do have more than just Pizza Hut|Lancaster or Dominos|Lancaster- we have a wide variety of smaller chains (think Pat’s Pizza in Lancaster, or Caruso’s Pizza|Lancaster) and even individual pizza shops like Uncommon Pizza, which is hidden back off of Kissell Hill Road between Landis Valley Museum and the new Penn Cinema.

Each of these shops have a different kind of pizza- different sauce, cheese, and toppings and almost everyone has a favorite that they order from almost exclusively. Pat’s, for example, piles on the cheese. Uncommon Pizza has a flavorful crust that doesn’t drip grease like most do- it is, in fact, totally grease free aside from the sauce, cheese, and toppings. Caruso’s flavors blend together beautifully. Cibo’s offers a lovely white pizza that uses garlic oil (garlic infused olive oil) instead of chunks of garlic, and they spread the ricotta rather than dolloping it on. I prefer their bianca to any other area restaurant, but my husband prefers Caruso’s. We all love Pat’s high quality ingredients and lack of skimpiness in their cheese, but they often close early without warning, and so late night snackers may find it difficult to rely on them.
